6 cups day old bread cut into ¾ inch cubes
8 whole eggs
29 oz heavy cream
7 oz milk
2 oz maple Syrup
5 gms vanilla extract
6.75 oz  sugar
1 gm salt.
0.25 oz ground cinnamon
1 gm ground nutmeg (optional)
19 oz white chocolate chips
8.5 oz chopped pecans
5 oz  gold raisins (optional)

Whisk together eggs, cream, milk, sugar, salt, cinnamon and nutmeg. Mix together bread, white chocolate, raisins and pecans and pour custard mix over dry ingredients preferably to soak over night, but for at least an hour or two. Grease casserole dish with a bit of the butter and fill dish with bread pudding mixture. Bake at 325° oven for 45 minutes to 1 hour until golden brown. Remove from oven and let set for 20 minutes.
